Some of my fondest memories are of Easter brunch at my grandparents’ house. They had a large terrace out front as well as a sprawling lawn, so it was the perfect setting for a springtime soirée. There was always a delicious spread of food: fresh fruit with whipped cream clouds, my mom’s spinach quiche, bottomless coffee and mimosas, and the highlight: my grandfather’s famous family recipe waffles. Then we’d have an Easter egg hunt – it was always a race to try and find all of the eggs hidden throughout the property before the chocolate melted in the Florida sun or the ants found them! 😂 I always enjoyed spending the day with my family.
I’m a bit more calorie-conscious these days and while I love to indulge in brunch favorites, I also try to make healthier decisions. I’ve gathered some recipes of lighter versions of the classics (some are Weight Watchers-friendly, others just have healthier modifications) below for your enjoyment:
