
I don’t know about you guys, but I have been struggling to find healthy weeknight dinner options lately. After a full day of work, I am completely zapped of energy and have no interest in cooking, but I still want to eat a nourishing and healthy meal.
As chance would have it, I was perusing the Williams-Sonoma website last week (as one does… 🤷🏼♀️😂) and rediscovered their pre-prepared food section. I have looked through, but never actually considered buying any of those items before… however, this time I stumbled upon a delicious-sounding pumpkin soup. This bisque (a cream-based soup) is flavored by pumpkin, caramelized onions, garlic and warm spices… just reading the description made me hungry!

After reading the product summary detailing how to make the soup, I was sold! Making this soup seriously couldn’t be easier. I ordered a jar right then and there. It arrived a few days later on a chilly, rainy day, which was perfect because my husband and I were both in the mood for a warm supper. The directions say to heat up two cups of low-sodium chicken or vegetable stock with the full jar of soup starter in a medium saucepan over medium-high heat. (makes 6 servings)

I always try to keep chicken stock in the house for just such occasions – this is my favorite brand. I love that it comes in 1 cup single-servings so that nothing goes to waste. It only took a few minutes on the stove to warm the soup up enough for serving.


I garnished each of our bowls with a generous sprinkle of dried oregano and freshly cracked pepper. The results were so savory and just what we were looking for. Fortunately, there was enough left over for another meal so we have more for tomorrow night’s dinner!
